This special dish contains fresh flavors of the lemon, a hint of dill, cucumbers, tomatoes with the grilled chicken makes a wonderful main dish salad, perfect for lunch or dinner. Marinated grilled chicken breast served over a bed of lettuce with feta, fresh diced tomatoes, cucumbers, green peppers, black olives, red onions, parsley and dill tossed in olive oil and fresh lemon juice.

How to make chill flower for garnish ?


1  Make chili into 6 cuts in each of them, from the stem to the tip & then do not cut through the base. The chilies should still be intact.

Place chilies in iced water. then gradually, the individual strips will curl outwards.

3  Drain chilies then remove all seeds (if washed). chili flowers are usually used as a garnish and are not eaten, so the heat of the chilies is not of concern.

Ingredients used

Take 400 g of skinless chicken breast fillets small piece fresh ginger
1 clove garlic, crushed
3 tablespoons salt reduced soy sauce
1 tablespoon lemon juice
3 tablespoons sun flower or peanut oil
1/2 teaspoon chili sauce
4 small fresh red chilies
1 medium red capsicum
150 g mung bean sprouts
2 spring onions, thinly sliced
3 tablespoons lime juice
salt and freshly grounded black pepper

peanut sauce

Take 3 tablespoons peanut butter
1 teaspoon soft brown sugar
1 can (about 165 ml) light coconut milk
1 tablespoon white wine vinegar
2 tablespoons salt reduced soy sauce.

Making recipe

1  Cut chicken breast fillets in a large cubes then peel off ginger and grant finely. After that combine ginger, garlic, soy sauce, lemon juice, 1 tablespoon oil in a bowl. Add chicken then chill it for 1 hour.

To make chili flower, using a sharp knife, make in to 6 cuts from the stem to the tip of each chili ; do not cut through base. Place chilies in a bowl of iced water until ready to serve.

Cut half- capsicum and slice into thin strips. arrange capsicum, mung beans and spring onions in a serving bowls. Whisk lime juice with remaining 2 tablespoon oil. Add salt and pepper to taste. Drizzle over vegetables.

Pre-heat grill to a medium heat. Remove chicken from marinade and thread onto 12 skewers. Cook chicken about 6 min, turning occasionally.

To make peanut sauce, place all ingredients in a pan over low heat. Cook in 5 min or until sauce thickens.

Place kebabs on top of salad. Coat with peanut sauce, serving remainder separately. Remove chilies from iced water and add to salt.
