Tuna fish with eggs

Canned tuna and egg are a classic salad combination and the sliced onion adds crunch. Use water- packed with tuna, if preferred.

Tuna fish salad 

Ingredients Used:

2 medium eggs, hard-boiled 
2 medium red capsicums (bell peppers)
1/3 cup (50 g/2 0z) green olives stuffed with pimiento
1 large onion
1 small head butter (butterhead) lettuce
1 can (425 g/15 oz) tuna in oil, drained 
 few springs oregano, for garnish



 herb vinaigrette

 4 tablespoons olive oil
 3 tablespoons sherry vinegar
 1 clove garlic, crushed 
 salt and freshly ground black pepper 
 1 tablespoon each chopped fresh thyme,
  oregano and flat - leaf parsley.






                                                                                                           

Making recipe

1. Peel hard-boiled eggs and slice into rounds. Dice capsicums. Slice olives. Cut onion into thin rings. Separate lettuce leaves and use to line serving plates.

2. Arrange eggs, capsicums, onion rings and olives on lettuce. Flake tuna into chucks and add to salad. 

3. To make herb vinaigrette, whisk oil, vinegar, garlic and salt and pepper to taste. Stir in chopped herbs.

4. Drizzle vinaigrette over salad. Garnish salad with oregano springs. 

  

     ** tuna salad with peas and onions:

  • Cook 1 1/4 cups (about 150 g) frozen peas in 150 ml (1/4 pint) vegetable stock (broth). Drain and place in a bowl. Cut 1 medium white onion into small cubes. Drain 1 can (425 g) water-packed tuna and flake finely. Add onion, tuna and take 2 teaspoons of small capers to peas.
  • To make dressing, stir 4 tablespoons mayonnaise and 3 tablespoons yogurt until smooth. season with salt, white pepper, 1 teaspoon dried Italian herbs and 1 to 2 tablespoons lemon juice. Mix dressing into salad. Arrange salad in small bowls or pile onto slices of pumpernickel bread.
