Ingredients 🥗
1 cup 200g of dried small white beans2 medium tomatoes, cored and diced
1 medium red onion, thinly sliced
2 mild light green banana chilies (capsicums), cut in thin strips
4 tablespoons of olive oil
4 tablespoons of red wine vinegar salt and freshly ground black pepper
4 tablespoons tahini (sesame paste)
2 tablespoons lemon juice
2 medium eggs, hard-boiled, sliced
1/3 cup (50g) black olives
1/2 cup (40g) fresh parsley leaves
Making recipe 🍽
1 soak beans in water overnight. Drain. Place in a pan and cover with water. Bring to a boil; cook it for 35 minutes or until soft. Let it cool in cooking water. Drain.
2 Place beans in a serving bowl. Add tomatoes, onions, and chilies. Whisk oil, vinegar, salt, and pepper and stir into salad.
3 Combine tahini, lemon juice, and about 4 tablespoons water in a bowl; stir until smooth. Add salt to taste. Add eggs, olives, and parsley to the salad. Spoon on sesame dressing.
